What is roux?

Curry roux is a mixture of flour, fats and oils, curry powder, seasonings, etc. that is thoroughly heated and then dried into solidified blocks or flakes.

How should curry roux be stored?

Curry roux is of a similar nature to chocolate in that the fats and oils inside melt and soften with heat.

Please do not store curry roux in direct sunlight or hot places.

Is it still okay to use if the surface of the curry roux turns white?

Yes, it is okay to use.
You may still cook and enjoy the curry as normal.

The fats and oils contained in the curry roux begin to melt when in a hot place. The surface may appear white when the roux then cools down and solidifies.

How should curry roux be stored after it is opened?

After the film of the curry roux is opened, it should be placed in an airtight container or wrapped in cling film and then stored in a refrigerator to maintain its quality.

We recommend that it not be stored in the refrigerator for longer than about three months.

READY-MADE (RETORT) SAUCE

What is ready-made (retort) curry? Why can it be stored for so long?

The curry in ready-made curry pouches is packed into airtight bags or containers and then pressure-heat sterilized once sealed.

Because of this, the food quality is unaffected by sunlight and decay by microorganisms.
In addition, it is able to be stored for long periods of time at room temperature as there is little degeneration from oxygen.

Can ready-made curry be eaten as it is?

As the curry has already been cooked, it may be eaten as it is.

However, it is more delicious when heated.
